Extra virgin olive oil — cold pressed, 100% italian
Top class olive oil obtained directly from olives and solely by mechanical means. Mild fruity, green in color, with hints of gold obtained by pressing the olives picked and selected directly prevalently by the olive varieties "Dritta", "Leccino" and with smaller percentages "Carpinetana", "Toccolana", "Indosso", "Olivastro" and "Pendolino".
- Cultivar: Dritta 40%, Leccino 30%, Posola Carpinetana Toccolana Indosso Olivastro Pendolino 30%
- Harvesting method: nibbling by hand
- Grinding-extraction: continuous cycle at low temperature
- Pressing: within 12 hours from collection
- Storage: temperature-controlled stainless steel vats under a stream of nitrogen

Unfiltered extra virgin olive oil - What is the unfiltered olive oil

Extra virgin olive oil — Single variety "Fagiolara"
Top class olive oil obtained directly from olives and solely by mechanical means. This olive oil is obtained exclusively from olives of the variety "FAGIOLARA", collected at an average altitude of 700 m above sea level. The consequence is a green and very dense olive oil, with full-bodied flavor.

Flavored extra virgin olive oils
For particular tastes and dishes, Coletta offers two lines of flavored olive oils, with lemon and paprika.
Extra virgin olive oil flavored with lemon, bottle or carafe

Cooking advice: olive oil with a strong lemon flavor. It is used as a dressing on boiled fish, meat, seafood salads, but also on a good steak or broccoli.
Extra virgin olive oil, flavored with chilli, carafe 0,25 lt.
This flavored olive oil is obtained by maceration with paprika, for about a week.
Cooking advice: thanks to its particular taste, it is indicated as a dressing, tasty dips and crunchy "bruschetta".
